Easter Bunny Cookies Recipe
Ingredients:
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, at room temperature
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- Royal icing (for decorating)
Instructions:

In a medium bowl, whisk together flour, baking powder, and salt.

In a separate large bowl, using an electric mixer, cream together butter and sugar until light and fluffy.

Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.

Gradually add flour mixture, stirring until a soft dough forms.

Divide the dough in half, and shape each half into a disk. Wrap each disk in plastic wrap and refrigerate for at least 30 minutes.

Preheat oven to 190°C (375°F)

On a lightly floured surface, roll out one circle of dough to 1/4-inch thickness.

Cut out bunny shapes using a cookie cutter, and place them on a baking sheet lined with parchment paper.

Bake for 10-12 minutes, or until the edges are lightly golden brown. (Place on cooling rack once ready to avoid over cooking them on the baking tray!)

Allow cookies to cool completely on the baking sheet before decorating with royal icing.

To decorate, use royal icing to pipe on bunny faces, ears, and other details as desired.

Allow the icing to dry completely before serving and enjoy your delicious Easter bunny cookies!
Note: You can also use food coloring to tint the icing in pastel colors to add an extra festive touch to your cookies.
